Broccoli and Cheddar Soup
I love broccoli and so do my kids (they call it eating trees LOL).
But I have never tried a broccoli soup - since in normally comprises of lots of cheese and cream and therefore really not 21 day fix approved.
But I adapted a recipe that I found so that it was "fix approved" and it was amazing - I hope you all enjoy it as much as we did!
Ingredients
-
3 Tbsp butter or olive oil
-
1 onion chopped
-
2 cups of diced carrots
-
3 cloves of diced onions
-
1/4 cup of gluten free all purpose flour
-
3 cups of gluten free reduced salt chicken or vegetable broth
-
2 cups of unsweetened almond milk (or other type of milk)
-
4 cups of chopped broccoli (1 medium head)
-
1 teaspoon of Dijon mustard (optional)
-
salt and pepper to taste
-
2 cups of freshly grated sharp cheddar cheese
Directions
Heat Butter/oil in large saucepan, add onion and saute till clear. Add carrots and saute for 2 more minutes. Stir in garlic and saute for a minute, then stir in flour.
Whisk in the stock until evenly combined. Stir in milk, broccoli, mustard, salt and pepper.
Bring to near boil and then let simmer (stirring occasionally) for 6-8 mins (until broccoli is cooked).
Stir in the grated cheese until completely melted.
NOTE: don't use pre-grated cheese as it doesn't melt as well
Serve immediately, and top with a little extra cheese
Enjoy!
