Broccoli Pizza Base
I LOVE pizza! I mean how can you not love pizza, plus it is just perfect to eat whilst watching a movie or rugby game.
But as I was struggling to lose my baby weight I started to realize that maybe pizza wasn't so good for my waist line.
Plus GOOD gluten free bases are just so hard to come by. So I stopped enjoying pizza with my kids and was miserable.
Then, through the Fixate cooking show I found this broccoli pizza base and my life changed overnight!
So now here I am sharing my version of this wonderful pizza base.
Ingredients

Parchment paper or baking paper

A Cheese cloth or thick paper towels
Food items

3 cups broccoli florets

1/2 cup of shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 large eggs, lightly beaten

1/2 tsp sea salt

1 clove of garlic chopped

1 tsp of dried basil or 1/4 cup of fresh chopped basil
Directions
Preheat oven to 400º F.
Line large baking sheet with parchment paper. Lightly coat with spray.
Set aside.
Place broccoli in food processor (or blender); pulse until fine using two or
three 5-second pulses, or until the consistency of bread crumbs.
Cook broccoli until just tender. Either in a steamer for about 5 to 7 minutes, or I use a steamer in the microwave for 4 or 5 minutes.
Transfer broccoli to cheesecloth to cool. Squeeze dry.
Note: If you do not have cheesecloth, use a heavy-duty paper towel
to cool and squeeze dry the broccoli “crumbs.”
To make crust, combine cooled broccoli, mozzarella cheese, Parmesan
cheese, eggs, salt, garlic, and basil in a medium mixing bowl; mix well.
Transfer broccoli mixture to the center of prepared baking sheet. Shape
into an approximately 10- to 12-inch pizza crust by pressing down and out
with fingertips.
Bake for 17 to 20 minutes, or until crust is set and is slightly browned
around the edges.
Top with your favorite toppings and put back in the oven for 6-8 minutes until the cheese has melted.
