Burrito Bowl (Slow cooker)
I did a lot of freezer meals before I went in for my operation. As I knew I wouldnt be able to cook for a while and I wanted to make things easier for everybody - especially my husband who was holding down the fort!.
One of those freezer meals was this burrito bowl - it was so easy (and yummy) it is now something I plan to always have made up and ready to go.
Ingredients

3 large chicken breasts

1 (16 oz.) jar salsa (ideally organic) make sure there is no added sugar

1 can kidney beans – drained

1 (small can) of corn - drained

1 tbsp chili powder

1 ½ tsp cumin

1 ½ tsp minced garlic

¼ tsp cayenne pepper

¼ tsp salt and pepper to taste
Directions
Place all ingredients into a gallon bag with the chicken breasts on the bottom. Place in the freezer.
When Ready to Eat
Empty contents into crock pot. I took the bag out of the freezer the night before to thaw) Stir. Cook on high for 4 hours or low for 8 hours.
When cooked shred the chicken and stir.
Top with plain Greek yogurt mixed with Salsa
I put mine on lettuce, and the kids got theirs in taco shells
