Cauliflower Rice
I have to admit, I have been holding off trying this ....
You see I am not a huge fan of cauliflower and thought the taste may be overwhelming.
But this week I put on my big girl pants and gave it a go!
I was really pleased with the results - 2 out of the 3 kids were too (3 out of 4 if you include my husband).
Ingredients

1 head cauliflower

5-10 cloves of chopped garlic

herbs/spices to taste - I used dried parsley and cilantro

2 Tbsp coconut oil (or extra virgin olive oil)

salt and pepper to taste
Directions
Wash the cauliflower (I use white vinegar and water), remove stems and break into small pieces.
Blend (or grate) until the cauliflower looks like rice (I used my blendtec)
Heat the oil in the fry pan, saute garlic over a medium heat (you could add onion as well).
Add the "rice" and stir so coated with the oil, if you have a lid put that on and cook for 5-7 mins otherwise continue in the fry pan stirring occasionally for 10 - 12 mins.
Add herbs, salt and pepper and stir then serve.
I put mine under meatballs (see recipe here).
NOTE, if you are using this as a side, use fresh herbs and add in the juice of 1 lime right before serving.
