Meatballs
I love meatballs and so do my kids! They are so easy to make, and best of all they freeze well so you can make a double batch and have a quick meal ready to go for those days when everyone has to be everywhere all at once!
Below is the recipe I use for the meatballs, I serve them on brown rice with either a tomato based sauce or sometimes for a change a sweet and sour sauce, enjoy!
Ingredients

500g ground chicken (turkey or extra lean beef)

1 tsp of sea salt

1 tsp dry mustard

1 tsp smoked paprika

1 large egg

¾ cup rolled oats (make sure they are certified gluten free)

2 cloves of finely chopped garlic

2 Tbsp of salsa
Directions
Preheat the oven to 400F and line a baking tray with parchment paper.
Combine all ingredients in a bowl and mix (I use my hands). Roll mixture into approximately 30 meatballs. Place on prepared baking tray.
Bake for 15-20 mins, until the middle is no longer pink.
Approx 6-8 meatballs per serving
